The event was held at Hill&Szrock, a butcher shop by day that turns into a trendy, stylish, intimate hidden restaurant at night. Kate and Jess’s main goal was to share their love for cooking and chillies with the lucky 25 of us there. As both have been obsessed with peppers since childhood, Chillilove is their way of paying homage to all things chilli.
The pair managed to showcase the hot peppers without putting our mouths on fire. Kate explained: “For us it's not always about how fiery the chillies are, although we do sometimes enjoy that whole mouth burn. We love the number of varieties and their unique flavours and heat. Spices should enhance and blend with beautiful ingredients, not dominate.”
With their ginger salmon ceviche with Scotch Bonnet, Sichuan Peppercorn beef accompanied with black truffle and chilli oil, and lamb marinated with naga bhut jolokia, we travelled from Peru to Laos while still sitting comfortably in London. We could tell that the chefs had roamed the world and that their momento is their fusion cuisine. Jess says: “Travelling and experiencing really hot dishes in Asia has definitely inspired us and we're always up for trying new ideas and combinations”.
My only regret was that two hours after starting this out-of-this-world 5 course meal, the experience was only going to live in our memory.
